Our extra virgin olive oil:

The extra virgin olive oil from Tenute Silvane is the total expression of the Nocellara Etnea monocultivar, a true and continuous emotion for the palate not only in its best combinations, but with any combination, even with simple freshly baked home-made bread you will taste everything its value.

Our company is located in Milo in the province of Catania at an altitude of 720 meters above sea level, thanks to its altitude it is one of the highest mountain municipalities of Etna and this has allowed the landlady... Etna itself , to visit the woods, vineyards and olive groves of Milo in its warmest and most enveloping guise, giving life over the years to a volcanic soil full of different chemical-physical characteristics that give our products uniqueness.

Our olive grove extends for approximately 2 hectares, in fact ours is a limited production, made ad hoc only for connoisseurs and all those who want to discover the true flavors of Sicily.

The warm and temperate climate of Milo, with its rainfall during the winter period, which mixes with the volcanic matrix of the soil, allow our oil to be the unifying product of all the exclusive complexity that resides in the Etna soil, thus giving life to an extra virgin with unattainable characteristics: golden yellow color with intense green reflections, intense fruity aroma and a perfect balance between bitter and spicy.



Harvesting and milling:

The harvest of our olives is carried out between the first and second ten days of November, directly from the plant exclusively by hand, thanks to our operators who pay attention to each single olive, ensuring that nothing falls to the ground; everything happens during the first hours of the morning practice which has a positive impact on the qualities of the oil with a greater formation of the volatile compounds that contribute to the green notes.

The maximum yield of our olives in oil does not exceed 18%, extracted thanks to mechanical crushers (kneaders) which keep the qualities and nutritional characteristics of the oil unchanged, guaranteeing a processing temperature always lower than 27°C (cold pressing) .



Organoleptic and nutritional qualities:

Thanks to its physical, chemical and organoleptic characteristics, the extra virgin olive oil from Tenute Silvanae is appreciated for its high nutritional value.

Thanks to "olive polyphenols" such as hydroxytyrosol, our extra virgin olive oil has antioxidant properties that allow our body to defend itself from pathological diseases such as arteriosclerosis and cardiovascular diseases.
